Can we treat a time series data (like the light curve of a star) as a Graph? I am asking this because let's say for a sinusoid time series with some varying red-noise, points together are more correlated than points that are further from each other. Is there a way to put that into a graph for light curve (time series) classification purposes?

Yes, sequences can be seen as oriented graphs. The correlation with closer points can be exploited with a special case of GNN, the CNN.
